Ribs take up an enormous amount of grate space laid flat. Standing them on edge in this rack lets you fit several racks in the footprint of one, with air circulating between each slab so they cook evenly without needing to be rotated.

The same slots hold baking potatoes upright, which is where the second half of the name comes from. Nickel plated steel.
